Lamprais (from the Dutch “lomprijst”) is a banana-leaf parcel of rice, meat, eggplant, and sambols baked together. It is a centrepiece of Dutch Burgher culinary heritage.
Families often prepare lamprais for Sundays and celebrations. The banana leaf steams the rice and deepens the aroma of the curry gravy.
